Easy Strawberry Cake Pop Recipe

Strawberry cake pop absolutely melt in your mouth. They transport you back to your childhood – small delicacies wrapped in chocolate frosting and sprinkles.

I wanted to try these at home after having them at a baby shower, and my kids absolutely loved them. It’s a fun way to serve cake and they can be stored in the refrigerator or freezer you can make them whenever you feel like having a rich dessert after dinner or a snack with evening tea.

I prefer making it from scratch by baking the strawberry cake, but you can use a cake mix as well if you are short on time.

I like to dip the cake pops in dark chocolate as it complements the strawberry flavor, but the most common dip is candy melt. You can even coat strawberry cake pop in mint chocolate as it tastes heavenly.

What is the Best Cake Mix for Strawberry Cake Pops?

For this recipe, I am using Betty Crocker Super Moist Delights Strawberry Cake Mix. It can easily be found in almost all supermarkets easily. If it’s not available in your area, you can use any strawberry cake mix available. Another one of my favorites is Duncan Hines Moist Strawberry Cake Mix.

No matter what brand of cake mix you use, it is important to read the ingredients and bake the cake according to the instructions on the box.

Cake

If you are not using a cake mix box, here are the ingredients required to bake the strawberry cake for the pops:

  • Baking powder 1 tsp
  • Salt ¼ tsp
  • Egg whites 3
  • Granulated sugar 1 cup
  • Food coloring
  • Whole milk 1/3 cup
  • Vanilla extract 1 ½ tsp
  • Plain yogurt ¼ cup
  • All-purpose flour 1 ¾ cup
  • Strawberry puree ¼ cup
  • Unsalted butter 8 tbsp
  • Baking soda ¼ tsp

Frosting

  • Vanilla extract 1 tsp
  • Whole milk 4 tsp
  • ½ cup freeze-dried strawberries
  • Unsalted butter ½ cup
  • Powdered sugar 1 ¾ cup

Coating

You can coat the cake pops in anything you want, but here are some things to give you an idea.

  • Sprinkles
  • 5 cups melted chocolate
  • Lollipop sticks

Chef Notes

  • Make sure the cake balls are firm because otherwise, they will break and not hold their shape. Therefore, it is recommended to freeze the cake balls before dipping them in the chocolate.
  • You can also use candy melts as it makes sure the pops are firm.
  • You can also use cake mix to prepare the cake instead of making it from scratch. I like Duncan Hines Moist Strawberry Supreme Cake Mix as it’s very soft. You can use any brand of strawberry cake to your liking.
  • I like coconut sugar sprinkled on pops, but you can use anything you like.

Instructions
 

  • Until there is only 1/4 cup of strawberry puree remaining, simmer the puree in a pot over low to medium heat, mixing regularly. Take off the heat and let it cool completely.
  • Set the oven to 350°C.
  • The flour, baking soda, baking powder, and salt should all be combined in a medium bowl.
  • The room-temperature butter and sugar should be smoothed out in a big bowl using an electric mixer. Beat the egg white until mixed after adding it.
  • Yogurt and vanilla should be mixed after being added. Add the dry ingredients gradually until just combined.
  • While your mixer is running on low speed, slowly pour the milk in and stir just until combined.
  • Pureed strawberries should just be barely absorbed. Several drops can be added.
  • Fill the buttered cake pan with batter and bake for 35 minutes. On a wire cooling rack, let the cake cool fully in the pan.
  • Grind the freeze-dried strawberries to make a powder.
  • Cream the butter in a big bowl until it’s silky and creamy.
  • Add the strawberry powder, milk, vanilla, and powdered sugar and mix for 3 minutes at medium-high speed.
  • To achieve the ideal consistency, add an additional 1-2 teaspoons of milk.
  • Now blend cake and frosting.
  • One tablespoon of cake mix should be rolled into a ball and placed on a baking pan covered with parchment paper.
  • Spend around 30 minutes freezing the sheet.
  • Remove the cake balls from the freezer. Place the entire assembly back in the freezer for 10 to 15 minutes after dipping the tip of a lollipop stick in Candy melts or Chocolate melts and pressing it into the middle of the cake ball.
  • Approximately 3–4 cake pops should be removed from the freezer at a time.
  • Submerge each cake pop completely in the candy coating, being sure to reach the lollipop stick as well. Put your cake pop upright in a box.
  • Sprinkles should be applied to each one right away since they dry quickly because they are chilly.
  • Before serving, chill in the fridge.
