Today I bring you my grandma’s easy Creamy Chicken Paprikash Soup recipe that will have you licking your bowls.

With just a few home ingredients, you can create a gourmet dish in no time. Also, if you are a fan of Mac’n Cheese, you should definitely try this recipe as an upgrade.

Key Ingredients

  • 1 chicken breast cooked and shredded into small pieces. You can also use chicken thighs and shred it into pieces. I am using chicken breast as its very juicy.
  • 1 chopped onion
  • 1 chopped carrot
  • 2 garlic cloves, minced
  • 6 tablespoon butter, salted or unsalted butter
  • ¼ cup flour
  • 4 cups chicken broth
  • 2 cups plain Greek yogurt
  • 2 tablespoons sweet paprika
  • ¼ cup white/ sherry wine
  • 1 tablespoon sugar
  • 1 tablespoon tomato paste
  • 2 cups gnocchi. You can also use any pasta of your choice for this recipe, but the traditional recipe comes with gnocchi.
  • 1 teaspoon white pepper
  • salt and pepper to taste

Steps

  1. Boil 1 chicken breast for 20-30 minutes, until cooked thoroughly. Once the chicken is boiled, keep aside the broth. Now, shred the chicken and season with pepper and salt.
  2. Now, place the pot over medium-high heat, and add 2 tablespoons of butter. Toss in the onions, minced garlic, and carrot. Saute them for about 5-10 minutes.
  3. Sprinkle the flour in the pot and the remaining butter to form a roux. Make sure to stir the contents constantly so the butter and flour are coating the vegetables.
  4. When the thick roux has turned golden, season with paprika, sugar, and white pepper.
  5. Now, add the sherry/ wine to the pot to deglaze it.
  6. Pour the chicken broth into the pan and bring it to a boil.
  7. Add the gnocchi, stir the mixture, and simmer for 15-20 minutes on low heat until the gnocchi is cooked.
  8. Add in the Greek yogurt and remove it from the heat.
  9. Let it cool, and garnish with parsley. Serve hot with a dollop of yogurt.

Important Things to Consider

  • If you are using sour cream with Greek Yogurt, you might see some white spots in the soup, which means that the cream did not dissolve completely.
  • If your soup is runny, there are different ways to thicken the gravy. I prefer cooking it down for a few more minutes. If you are in a hurry, you can add a bit of cornstarch slurry to the soup.
  • If you are a fan of cheese, you can add a bit on top when the soup is cooked for a creamy texture.
