Easy Chicken Karahi Recipe – Flavorful & Spicy

Chicken karahi is one of the most popular dishes in Indian and Pakistani cuisine. Today I bring you a traditional Pakistani-style Chicken Karahi recipe that can be prepared quickly.

Karahi is the name of a cast-iron pan that is similar to a wok. Chicken Karahi is made in a pan, where the meat is simmered and fried in an open fire with spices.

I’ve made the recipe multiple times, and everyone in the family loves it. It’s rich, with green chili peppers, ginger, and tomatoey masala gravy. Traditional chicken karahi is made with onion, masal, ghee, and tomato.

What is Chicken Karahi made of?

This chicken karahi recipe is simple to make with a few ingredients only.

  • Oil/ Ghee: Ghee works best with this recipe. You can also use oil or butter if you want in the same quantity.
  • Tomatoes: Tomato is the main ingredient of chicken karahi. You can use any tomatoes you have – Roma or vine.
  • Chicken: I like to use boneless chicken, but you can use whole chicken cut into small pieces.
  • Onion: Onion makes sure your gravy is thick and you have more masala. However, you can omit onions if you want.
  • Pakistani spices: To give the karahi its traditional taste, you need a mix of Pakistani spices. It requires basic spices like garam masala, cilantro, mustard powder, and Kashmiri chili powder.

  • This recipe does not require water, but if you feel like the chicken is too dry, and is still uncooked, you can add water to the recipe towards the end and cook it.
  • Add crushed ginger when the chicken is cooked for more flavor.
  • If you want to increase the spice level, you can serve it with fresh green chilies.

What to Serve with Chicken Karahi

Typically dishes with gravy and masala like Chicken Karahi goes well with naan, rice, or flat bread. Serve karahi with brown steamed rice, Tandori naan, paratha, roti, or dinner rolls.

Ingredients
  

  • 2 lbs boneless chicken or bone-in-chicken cut into small pieces
  • 5 tbsp ghee or butter
  • 1 small onion chopped into small pieces
  • 8 garlic cloves minced
  • 3/4 ginger minced
  • 2-3 green chili peppers
  • 8 small tomatoes chopped into small pieces
  • 2 tsp coriander powder
  • 1 tsp red chili powder
  • 2 tsp salt
  • 1 tsp cumin powder
  • 1/4 cup plain yogurt
  • 1 tsp garam masala
  • 2 tbsp fresh cilantro chopped

Instructions
 

  • Take a large pan, and put it over a high flame. Add ghee and onions. Saute for 5-6 minutes or when lightly golden.
  • Add garlic, ginger, and chili peppers. Saute for a minute.
  • Add the chicken along with salt. Fry it for 5-6 minutes, until the color of the chicken changes to light golden. Make sure all the water is dry.
  • Add tomatoes, cumin, red chilis, garam masala, coriander, and sautee on high heat for 3-4 minutes.
  • Lower the heat and put a lid on the pan. Cook for 20 minutes, or until the chicken is tender.
  • Uncover the pan, raise the heat, and saute for 10 minutes. Reduce the excess liquid and add yogurt.
  • Saute for another 3-4 minutes and check the taste. You can add more spices according to taste.
  • Top it off with green chilies, ginger, and cilantro.
