This watermelon beet salad is colorful and super refreshing with goat cheese. It is 100% vegan, gluten-free, and rich in antioxidants.

Watermelon and beets sound like a strange combination but wait till you try it out. This salad is very popular in Mexico. The contrast of flavors in this salad tastes absolutely delicious and the goat cheese adds more juice to the salad.

A drizzle of olive oil and balsamic take the salad to another level. The crunchy walnuts add an earthy flavor to the salad.

Aside from the beautiful hues of watermelon and beets, this refreshing salad is rich in antioxidants. Betalains in beets and lycopene in watermelon help prevent cancer. Both fruits are great for improving blood pressure and are rich in fiber and minerals.

It’s a perfect balance of sweet and savory. In short, this is the best summer salad. This salad is easy to fix and requires very less time. The only time-consuming part is roasting beets.

How to Roast Beets

For this recipe, we are going to use roasted beets. You can use pre-cooked or pre-roasted beets, but I like to roast the beets at home. Here’s how you can do it:

  1. Wash the beets and peel them.
  2. Wrap individual beets in foil and place them in the baking tray.
  3. Roast the beets at 400F for about 30-40 minutes.
  4. Take the beets out of the oven and let them cool completely. Once the beets are cooled, cut the beets into small cubes.

  • Watermelon: Make sure to use ripe and sweet watermelon for this recipe. We need pitted watermelon for this salad.
  • Beets: You can roast the beets at home, or you can buy pre-cooked beets. I recommend getting plain ones rather than pickled beets.
  • Goat cheese: You can use goat cheese in this salad, or Manchego cheese as both taste amazing with a creamy and nutty flavor.
  • Cucumber: English cucumber adds more color to the salad.
  • Walnuts: For a much-needed crunch, toasted walnuts add the best texture to the salad.
  • Dressing: For the dressing, I’m going to add balsamic vinegar and olive oil with salt and pepper.

Variations and Substitutions

  • Feel free to replace walnuts with nuts of your choice. You can use almonds, sunflower seeds, pistachios, or pecans.
  • If you cannot find red beets, you can use golden beets as well.
  • If you cannot find goat cheese, substitute it with feta, Asiago, or Pecorino Romano cheese.
  • Add fresh mint and basil. Spinach also works great.
  • You can add your favorite fruits to the dish like figs, tomato, or farro as add-ins.

Ingredients
  

  • 2 large roasted beets
  • 2 cups of watermelon seedless
  • 1/2 cup diced cucumber
  • 1/4 cup goat cheese crumbled
  • 1 tbsp olive oil
  • 1/4 cup crushed walnuts
  • 1 tbsp balsamic vinegar
  • salt and pepper to taste

Instructions
 

  • Roast the beets in the oven as instructed above and let them cool completely.
  • Cut watermelon into small cubes. It should be small enough to easily scoop in the spoon or a fork.
  • Add diced watermelon, beets, and cucumber to a large bowl.
  • Sprinkle with cheese, walnuts, olive oil, and salt and pepper.
  • Combine everything with a hand or a spoon and dish it out.
