  • Egg whites: You can use egg whites by separating them from a whole egg, or you can use them from a carton, whichever is easier for you. I have separated the whites from the whole eggs for this recipe.
  • Fine almond flour: The key to making smooth wraps is to use super fine almond flour. It makes sure there are no lumps. If you want to decrease the carbs, even more, almond flour can be substituted with xantham gum. It keeps the wraps fluffy.

How to separate the egg white from the yolk?

For this egg white wrap recipe, we need egg whites. You can find egg whites in the supermarket, but if you are using whole eggs, you can separate them easily. There are two ways to do it:

  • Crack an egg using a spoon and pry it open. Rock the egg from one side to the other to keep the yolk in while the egg white is dropped in the bowl. Continue rocking until you get most of the egg white out.
  • Crack the eggs into a bowl. Take an empty plastic bottle and position it over the bowl, upside down. Squeeze the bottle and position it over the egg yolk. The rim of the bottle should be touching the egg yolk. Release the grip on the bottle so the air is allowed in the bottle. It will suck the egg yolk into the bottle as well. Repeat this for all the yolks separately.

  • If you don’t have an issue with gluten, feel free to add all-purpose flour. However, make it half of the quantity used in this recipe, or the crepes will be thicker.
  • You can cut the crepes into thin stripes and make keto noodles.
