Gluten Free Cassava Flour Cookies

Cassava flour cookies are gluten-free, soft, and chewy. The cookies are filled with chocolate chips and are similar to traditional cookies.

Instead of all-purpose flour, these cookies are made with cassava flour. It is paleo and gluten-free. The thing about cassava flour is that it works great with bread and cakes, but when it comes to cookies, if you don’t use the ingredients in the right quantity, the cookies will fall apart.

So, after experimenting a few times, I learned a few things before perfecting the recipe.

Unlike traditional cookies, cassava flour cookies need time to set and they should be completely cooked when you transfer them to the baking sheet. So, popping the dough in the fridge before baking is important.

Granulated sugar, like coconut sugar, won’t work for these cookies. A sticky sweetener like honey is best for these cookies as it makes them chewy.

Using more than one egg will make the cookies rubbery and cakey.

For this recipe, I used a mixture of coconut sugar and honey as a sweetener. For eggs, the ratio was one egg for one cup of cassava flour. To make these cookies, you need some prepping time as the dough needs to chill in the refrigerator.

These cookies go great with a side of frozen yogurt or vanilla ice cream.

Chocolate Chip Cassava Flour Cookies Recipe

Ingredients
  

  • 1/2 cup ghee
  • 1/3 cup raw honey
  • 1 cup cassava flour
  • 1 egg
  • 1 cup dark chocolate chips
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp sea salt

Instructions
 

  • Preheat the oven to 350F and line the baking sheet with parchment paper.
  • In a large mixing bowl, whisk together ghee, honey, vanilla, and coconut sugar until smooth.
  • Add an egg and whisk for another 2-3 minutes.
  • In a separate bowl, combine cassava flour, baking soda, baking powder, and salt.
  • Add the dry mixture to the wet ingredients in small batches. Combine until smooth.
  • Now add the chocolate chips and fold the dough with a spatula.
  • Chill the dough for 15-20 minutes in the fridge.
  • Place the scooped dough onto the baking sheet, and make sure they are 2 inches apart to give them enough space to spread while baking.
  • Bake in the oven for 10 minutes or until golden brown.
  • Once completely cooled, remove the cookies from the baking sheet and serve.

Notes

  • Once the cookies are baked, allow them to cool completely on the baking sheet and don’t remove them, or else they will fall apart because these cookies are very delicate.
  • These cookies are soft at room temperature, but you can chill them in the fridge before serving.
  • Leftover cookies can be stored in the refrigerator in an airtight container for over a week.
